How The Food Hub became the most popular truck at a Woolworths Christmas party, and what happened when demand outpaced the contract.
In December 2024, Red Jelly, a brand activation agency, engaged The Food Hub to cater part of Woolworths' end-of-year Christmas party at their head office in Bella Vista. It was an outdoor event, multiple food trucks, and a large staff crowd ready to celebrate.
Our contract was for 800 serves. One truck. 13 staff. Two menu items: southern fried chicken wings and popcorn chicken with fries.
We ended up serving 1,350.
There were around five food trucks at the event. From the moment service started, our queue built faster than anyone else's. The reason was simple: we were getting food into people's hands almost immediately after they ordered. Short wait. Great food. Word spreads fast at a party.
As the crowd kept coming, we tracked our stock in real time. When it became clear demand was going well beyond what we'd contracted for, we didn't just keep serving and hope for the best. We called Red Jelly mid-event, explained where we were at, and asked whether they wanted us to keep going.
They said yes. We had the stock. We kept going.
By the end of the two-hour service window, we had served 1,350 guests, 550 more than contracted, without a drop in quality or wait time.
The number that matters

This isn't a criticism of other operators. High-volume event catering is genuinely hard, and most food trucks are not built for it.
The difference comes down to two things: menu design and staffing.
We ran two items. That's deliberate. Southern fried chicken wings and popcorn chicken with fries are crowd-pleasing, consistent, and fast to execute under pressure. When you have one truck trying to push through hundreds of orders in a two-hour window, a complex menu with multiple prep steps becomes a bottleneck. Simplicity is a competitive advantage.
On staffing, 13 people in one truck sounds like a lot. It isn't, at this scale. Every person had a defined role. No one was doing two jobs at once, no one was waiting on someone else. The flow from order to handover was as short as we could make it, and we'd practised it enough that the team didn't need to think. They just executed.
That's why our queue moved faster. And that's why the crowd voted with their feet.
