What we hold

  • NSW Food Authority notification as a mobile food business.
  • Council food business registration.
  • A Food Safety Supervisor certificate held by the team.
  • $20M public liability insurance, with a certificate of currency on request.

How we run the trucks

  • Fridges and hot holding on the generator, temperatures checked through service.
  • Everything cooked fresh to order on the truck, on a flat top, in a fryer, over the flame or in the pizza oven, not reheated from a bain marie.
  • Our own fresh and waste water on board, so nothing depends on the venue.
