Sydney's Toughest
BBQ Crowd.
They Keep Asking Us Back.

Meatstock at Sydney Showground is where some of Australia's most serious BBQ fans spend their weekend. We brought the American BBQ Kitchen, and we have been asked back year after year since.

Key Takeaways

  • The American BBQ Kitchen has been a returning vendor at Meatstock Sydney, back year after year.
  • Meatstock crowds know BBQ. Feeding them well is a different kind of test to a corporate lunch.
  • We ran two stalls at the one event: American BBQ Kitchen and our Fried Oreo dessert operation.
  • Getting invited back is the only review that matters at a festival. We got invited back.

What Meatstock Is

Meatstock is Australia's premier BBQ and live music festival. It happens at Sydney Showground at Olympic Park, draws thousands of people over the course of a weekend, and attracts a crowd who actually knows the difference between good smoked brisket and something that has been sitting in a warmer since morning.

These are not people who settle. They travel for great food. They will queue for it, talk about it, and come back for seconds if it is worth it. And if it is not worth it, they will not come back at all.

That is a different kind of pressure to a corporate lunch or a private event. At Meatstock, you are not feeding a captive audience on a lunch break. You are competing for the attention of people who have dozens of options around them, all of them specifically curated for people who love meat and smoke and fire.

What We Ran at the Festival

The American BBQ Kitchen is The Food Hub's dedicated American barbecue truck: slow smoked brisket, pulled pork, pulled lamb, southern fried chicken, loaded fries, and the kind of sides that finish the plate properly. At Meatstock, it fits right in. The crowd knows what they want, the menu delivers it, and the truck is set up to move at a good pace even when there is a queue ten people deep.

Alongside the BBQ truck, we also ran our Fried Oreo dessert stall. Deep-fried Oreos have become one of our most talked-about offerings at public events, and Meatstock was a strong proof of that. A festival crowd that has just eaten a plate of brisket and pulled pork is very ready for a hot, crispy, powdered-sugar dessert. The stall ran steadily across both days.

Two stalls, one fleet

For festival and multi-day events, we can operate more than one stall simultaneously. American BBQ Kitchen and Fried Oreos at Meatstock is a good example of what that looks like in practice.

What Getting Invited Back Means

We have been a returning vendor at Meatstock, back year after year. Festivals like Meatstock have limited vendor spots and plenty of trucks wanting them. Organisers tend to bring back the vendors they know will perform, so being asked back each year is something we are quietly proud of.

Getting asked back means the food held up under scrutiny from people who know the subject. It means the stall ran cleanly, the team handled the volume, and the crowd responded. That is not something you can fake, year after year.

For us, Meatstock is a genuinely useful test. A crowd that knows its BBQ is a hard one to please, and the response there gives us real confidence in what we can bring to an event.

Running a Food Stall at a Major Festival

Operating at Sydney Showground is a logistically serious business. The site has strict licensing and insurance requirements, vendor portals, council compliance documents, and specific power and space allocations that get confirmed weeks before the event. We have been through that process at Meatstock more than once, so we know exactly what it involves.

For event organisers considering whether to bring The Food Hub in as a festival vendor, that track record at Showground-level events is relevant. We are not learning how this works on your site. We have already done it.

If you are running a festival, market, or multi-day event and want to know what working with us looks like, take a look at our corporate and event catering page or use the form below to get a conversation started.

For festival and public event organisers

We have all the documentation, licensing, and insurances required to operate at major venues. Public liability, food safety certification, council compliance. It is all in order. We handle the paperwork so you do not have to chase it.

Our American BBQ Menu

The American BBQ Kitchen offers slow smoked and grilled American barbecue: brisket, pulled pork, pulled lamb, southern fried chicken, loaded fries, and a range of sides. The menu is designed to work both as a full lunch or dinner service and as a stand alone festival stall. Everything is cooked fresh, not reheated, and the truck is set up to handle high volume while keeping the quality up.

We also offer vegetarian options within the BBQ menu, because even at a meat festival, some people in the group do not eat meat. If dietary requirements are a consideration for your event, take a look at our guide on how food trucks handle dietary requirements.
